Ingredients
Sushi rice
2 cups cooked sushi rice
⅔ cup seasoned rice vinegar
Cured tuna
12 oz sushi-grade tuna
1 tbsp kosher salt
1 tbsp granulated sugar
Spicy tuna
2 tbsp Kewpie mayonnaise
1 tbsp sriracha
1 tsp gochujang
1 tsp sesame oil
1 tbsp soy sauce
1 tbsp sesame seeds
For serving
1 avocado, sliced
1 jalapeño, thinly sliced
Optional: green onion, furikake, extra sesame seeds
Instructions
Season the tuna: Combine salt and sugar. Lightly coat the sushi-grade tuna and refrigerate for about 15–20 minutes. Rinse thoroughly, pat dry, and slice or dice. Keep refrigerated.
Make the sushi rice: Rinse and cook sushi rice according to package directions. While warm, gently mix with rice vinegar.
Chill the rice: Press the seasoned rice firmly into a parchment-lined container or baking dish, creating an even layer about ½–¾ inch thick. Refrigerate until completely chilled and firm, ideally at least 1 hour.
Make the spicy tuna: Combine tuna with Kewpie mayo, sriracha, gochujang, sesame oil, soy sauce, and sesame seeds. Keep refrigerated until ready to serve.
Crisp the rice: Remove the chilled rice and cut into squares. Lightly spray or brush with oil if desired. Air fry at 375°F for 12–18 minutes, flipping halfway through, until golden and crisp on the outside.
Assemble: Top each crispy rice square with avocado, jalapeño, and spicy tuna.
Finish: Add sesame seeds, furikake, or green onion if desired. Serve immediately.
