Recipe: Pistachio Crusted Fish

If your doc ever nudged you toward more Mediterranean-style meals, go ahead and save this one. The pistachio crust works with most fish, comes together fast, and still feels elevated.



INGREDIENTS

6-8 fish fillets

½ cup crushed pistachios

⅓ cup breadcrumbs

2 tablespoons parmesan cheese

1Tbsp onion powder, garlic powder, salt, pepper

2 tablespoons olive oil

4 tablespoons Dijon mustard


INSTRUCTIONS

While the air fryer heats to 350°, crush your pistachios and mix with breadcrumbs.


Brush your fillets with Dijon, coat in the pistachio-panko mix, and air fry for 10–15 minutes until golden.


Simple, gourmet, and nutty in a good way,


I paired my pistachio crusted fish with Cajun roasted Brussels and @allgoodles mac for the easiest balanced plate.
