Cozy Ground Turkey Sweet Potato Skillet

For my protein girlies who are tired of chicken and rice: meet your new cozy skillet.

This ground turkey sweet potato skillet is the kind of dinner I want on a night when I need something warm, hearty, and satisfying without making dinner a whole production.

It's made with lean ground turkey, tender sweet potatoes, kale, bell pepper, jalapeño, and plenty of cozy spices, then finished with melty mozzarella and fresh cilantro. The result is savory, slightly sweet, a little spicy, and very much comfort food.

And the best part? One skillet, minimal cleanup.

Why You'll Love This Ground Turkey Sweet Potato Skillet

I love a recipe that makes nutritious eating feel less like a project.

This skillet checks a lot of boxes without tasting like it's trying too hard to be a "healthy dinner":

  • Protein-packed: Ground turkey and mozzarella bring satisfying protein to the meal.

  • Fiber-rich: Sweet potatoes and kale add fiber alongside plenty of colorful produce.

  • Cozy and flavorful: Cumin, chili powder, jalapeño, and melty mozzarella make this anything but boring.

  • One-skillet friendly: Less cleanup means more time for literally anything else.

  • Weeknight realistic: A quick microwave shortcut gets the sweet potatoes tender without waiting forever for them to cook in the skillet.

Cozy Turkey, Sweet Potato & Kale Skillet

Servings: 6Prep Time: 10 minutesCook Time: 25–30 minutesTotal Time: 35–40 minutes

Ingredients

  • 2 tablespoons olive oil

  • 1 tablespoon minced garlic

  • 1 jalapeño, finely diced

  • 1 pound ground turkey

  • 1½ tablespoons ground cumin

  • 1 teaspoon chili powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 cup diced yellow onion

  • 1 yellow bell pepper, diced

  • 3 small or 2 large sweet potatoes, peeled and diced into ½-inch cubes (about 3 cups)

  • ½ cup water

  • 3 cups chopped kale, stems removed

  • ½ cup shredded mozzarella

  • ¼ cup fresh cilantro, chopped

Instructions

  1. Place diced sweet potatoes in a microwave-safe bowl with 2 tablespoons of water. Cover loosely and microwave for 8–10 minutes, stirring halfway through, until beginning to soften. Drain any excess water.

  2. Heat olive oil in a large skillet over medium-high heat. Add garlic and jalapeño and cook for 1 minute. Add ground turkey and cook for 7–8 minutes, breaking it apart with a wooden spoon, until browned and cooked through.

  3. Add cumin, chili powder, salt, and pepper. Stir to coat. Add onion and bell pepper and cook for 3–4 minutes, until beginning to soften.

  4. Stir in the partially cooked sweet potatoes and ½ cup water. Cover and cook for 5–7 minutes, stirring occasionally, until the sweet potatoes are completely tender. Add a splash more water if needed.

  5. Stir in the kale and cook uncovered for 2–3 minutes, until wilted.

  6. Taste and adjust seasoning as needed. Sprinkle mozzarella evenly over the top, cover, and cook for 1–2 minutes, until melted.

  7. Remove from heat and garnish with fresh cilantro. Serve warm.

The Sweet Potato Shortcut

The one step I wouldn't skip is microwaving the sweet potatoes before they hit the skillet.

Sweet potatoes can take a while to become tender when cooked entirely in a skillet, especially when you're trying to get dinner on the table quickly. Microwaving the diced sweet potatoes for 8–10 minutes gets them partially cooked, so they only need a few more minutes in the skillet to finish.

It's one of those little cooking shortcuts that makes a big difference on a busy night.

A Little Nutrition, Simplified

As a dietitian, I'm always looking for ways to make everyday meals more satisfying without turning them into a nutrition math equation.

Here, we're pairing protein + fiber + produce + carbs + fat in one cozy meal.

The ground turkey and mozzarella contribute protein, while sweet potatoes and kale bring fiber and produce to the table. The sweet potatoes also provide a source of carbohydrate, which is part of what makes this meal feel hearty and satisfying rather than like a bowl of vegetables with a side of protein.

That's the kind of balance I want from weeknight meals: food that tastes good first, with nutrition working quietly in the background.

Make It Your Own

This skillet is pretty flexible, so don't be afraid to make it work for you.

Want more heat? Leave some of the jalapeño seeds in or add a pinch of red pepper flakes.

Want more greens? Add an extra handful of kale. It will cook down considerably.

Want more protein? Increase the amount of ground turkey or add a side of Greek yogurt.

Not a cilantro person? Fresh parsley or green onion would also work.

Want it extra cheesy? I certainly won't stop you from adding a little more mozzarella.

What to Serve With It

Honestly, this skillet can absolutely stand on its own as a complete meal.

If you're feeding a bigger group or want to stretch it further, serve it alongside:

  • A simple green salad

  • Avocado

  • Warm tortillas

  • Greek yogurt or a dollop of sour cream

  • Fresh fruit

The Bottom Line

This is exactly the kind of recipe I want more of in my kitchen: cozy, cheesy, protein-packed, full of produce, and simple.

Because balanced eating doesn't have to mean making a separate "healthy" dinner.

Sometimes it just means taking the dinner you actually want to eat and building it in a way that works for you.

Cozy dinner. One skillet. Minimal cleanup. Say less.
